Marvelous Meatless Macaroni
Five vegetarian
recipes using macaroni
MACARONI DELIGHT
¾ cup
onion, chopped
3 teaspoons butter
3 cans cream soup
1 ½ cups milk
3 cups processed
cheese or Velveeta, shredded
6 cups cooked macaroni
6 tablespoons bread
crumbs, buttered.
Cook onion in
butter until tender. Stir in soup, milk, 2 ½ cups cheese.
Heat until cheese melts. Add macaroni. Pour into casserole.
Top with remaining cheese and crumbs. Bake at 350 for 30 minutes.
MACARONI AND
CHEESE
16 ounces macaroni,
cooked
2 ½ cups cheddar
cheese, shredded
1 ½ teaspoons
salt
4 cups milk or medium
white sauce
Layer in buttered
dish the macaroni, cheese and salt. Pour the milk or sauce down the
side of the dish. Bake at 350 for 40 minutes.
MEATLESS CASSEROLE
16 ounces macaroni
5 cups tomatoes
4 teaspoons onion,
chopped
4 teaspoons butter
1 package broccoli,
steamed
1 cup cheddar cheese,
grated
Cook macaroni
according to directions. Drain and rinse. Steam broccoli.
Brown onion in butter. Add tomatoes and simmer 5 minutes. Add
macaroni and salt. Mix well. Continue simmering for 10 minutes.
Arrange broccoli in buttered dish. Fill casserole with macaroni and
tomato mixture. Sprinkle with cheese. Bake at 400 for 15 minutes.
PASTA WITH
BASIL
Ready in 15 minutes
or less
7 ½ cups
uncooked macaroni
3 small onions, chopped
3-9 tablespoons olive
oil
6-9 tablespoons dried
basil
3 cups shredded mozzarella
cheese
Cook pasta according
to package directions. Meanwhile, in a skillet, sauté onion in
oil until tender. Stir in basil; cook and stir for 1 minute. Drain
pasta; add to basil mixture. Remove from the heat; stir in cheese just
until it begins to melt. Serve immediately.
SKILLET MACARONI
½ cup
margarine
3 ½ cups macaroni,
uncooked
2 large onion, chopped
1 teaspoon salt
1 teaspoon garlic
1 teaspoon oregano
¼ teaspoon
dry mustard
4 cups water
2 tablespoons flour
2 cans evap. Milk
(13 oz each)
4 cups cheese, shredded
In a large skillet,
melt butter over low heat. Add macaroni, onions, salt, garlic, oregano,
mustard. Cook, stirring over med. Heat for 7 min., or until onion becomes
transparent. Add water, bring to a boil. Cover; simmer 20 minutes
or until macaroni is tender. Sprinkle flour over mixture; blend well.
Stir in evap. Milk and cheese. Simmer 5 minutes longer, stirring occasionally,
until cheese melts. Serve hot.

can be prepared as is and then divided and frozen for additional meals during
