Nothing Weird Here Vegetarian Dishes
Five Quick and
Kid Approved Vegetable Meals
BROCCOLI MELT
2 packages English
Muffins, split
4 tomatoes, sliced
basil
2 pounds cheddar
cheese, shredded
1 package frozen
broccoli, cooked
Spread muffins
with butter then mayonnaise. On each half, place cooked broccoli.
Top each with 2 tomato slices. Sprinkle with basil. Top with cheese.
Broil about 6 inches from heat until veggies are hot and cheese melts, about
2 minutes. Serve immediately.
CREAMED ASPARAGUS
ON ENGLISH MUFFINS
1 cup butter
1 cup flour
4 cups milk
4 cups sour cream
4 cans tender asparagus
salt and garlic
shredded cheese
In sauce pan
melt butter, stir in flour. Brown. Add milk and sour cream.
Stir and cook until thick and smooth. Season to taste. Gently
stir in 2 cans well-drained cooked asparagus. Serve over English muffins
with shredded cheese.
FRENCH BEAN
CASSEROLE
2 16 oz can French
green beans, drained
2 16 oz can corn,
drained (optional)
2 cups cheddar cheese,
grated
1 cup onion, chopped
1 cup celery, chopped
2 cans cream soup,
undiluted
8 ounces sour cream
1 box Cheese type
crackers, crushed
2 sticks margarine,
melted
Mix ingredients
together except cheese crackers and margarine. Pour into greased casserole
dish. Melt margarine and pour over crust crackers. Sprinkle over
the casserole. Bake at 350 for 40 minutes.
SUMMER SQUASH
CASSEROLE
4 pounds yellow
squash, diced, cooked tender
2 carrots, coarsely
chopped
2 onions, chopped
2 sticks margarine,
melted
2 cans cream soup,
undiluted
2 cups sour cream
8 ounces unseasoned
cornbread stuffing
Mix all ingredients
plus ½ of stuffing and put in a shallow greased casserole dish.
Sprinkle remaining crumbs. Bake at 350 for about 20 minutes.
VEGETABLE
PIE
12 tablespoons
butter, softened slightly
2 cups whole wheat
flour
1/8 teaspoon salt
8 cups steamed vegetables
cheese slices
Crust: cut butter
into very small pieces. Mix butter, salt and flour with fingers until
it resembles cornmeal. Press over bottom of dish. Bake for 10
minutes for cooked filling or 5 minutes if filling is going to beaked in
the pan.
Put the vegetables
in the pan. Pour cheese sauce or white sauce or other sauce over vegetables.
Instead of pouring sauce, you may just used several slices of cheese. Sprinkle
on a topping. Bake in 350 oven until sauce bubbles.
