Pleasing Potatoes
4 Potato Recipes

AU GRATIN POTATOES

2 32 oz bags of frozen precooked hash brown potatoes
4 cans cream soup
4 cups sour cream
4 cups grated cheese
1 cup butter, melted
2/3 cup finely chopped onion
Topping:
2 cups corn flakes, crushed or bread crumbs
4 tablespoons melted butter

Combine soup, sour cream, cheese, 1 cup melted butter and onions.  Gently blend into potatoes.  Combine flakes or crumbs with butter.  Sprinkle on top of potatoes.  Bake at 350 for 30 minutes.

COMPANY POTATO CASSEROLE

24 potatoes, boiled and diced
2 pints sour cream
1 stick margarine
2 cans cream chicken soup
1 cup green onions with tops
3 cups cheddar cheese, shredded
corn flake crumbs
Heat butter and soup.  Add sour cream, onion and cheese.  Combine with potatoes.  Bake 45 minutes at 350.  Cover with 4 tablespoons of melted butter and corn flakes.

CREAM-CHEESY POTATOES

Dry Potato Flakes, reconstituted (12 servings worth)
An eight-ounce pkg. cream cheese
2 eggs
1 tablespoon dry minced onion
1 tablespoon parsley flakes
2 tablespoons butter.
Prepare potatoes according to package.  Beat in cheese and onions.  Add eggs and blend well.  Stir in parsley.  Spoon into a baking dish and smooth top with back of tablespoon.  Pour melted butter over potatoes.  Bake at 350 for 25 minutes.

POTATO PANCAKES

12 large potatoes, peeled and quartered
2 large onions, grated
4 eggs
1 cup sour cream
4 tablespoons flour
½ cup fine bread crumbs
Salt to taste

Place potatoes in a bowl of water to cover.  Grate potatoes a few at a time.  Return to bowl of water to cover.  Combine remaining ingredients;  drain potatoes and mix with other ingredients.   Check consistency of mixture.  It should be neither too watery nor too thick.  If thin, add more flour, if thick, add more sour cream.  Drop by heaping spoonfuls into hot oil about ½ inch deep and fry to golden brown.  Drain.  Keep warm in oven set at 350 until all pancakes are cooked.  These are very good served with grated cheese, crumbled bacon, catsup or applesauce.

I have posted more than one recipe on each of my cooking pages.  For your convenience I have submitted this individual index so you can find which recipe is on which page.  I hope you enjoy them.  Remember that my recipes are altered to be for a family of twelve.  If your family is smaller, many of the recipes can be prepared as is and then divided and frozen for additional meals during stressful times.  This index is just for listing the recipes and does not include the other kitchen and cooking articles.
