More Pleasing Potatoes
4 Delicious Potato Recipes

ROASTED RED POTATOES

3 pounds small red potatoes
3 tablespoons salt
3/8 teaspoon pepper
6 tablespoons grated parmesan cheese

Cut the potatoes into ¼ -in thick slices; toss with oil.  Place in a single layer in a greased 13x9x2 baking pan.  Sprinkle with salt, pepper and Parmesan cheese.  Cover tightly with foil.  Bake at 350 for 40 minutes or until tender.

YUM-YUM POTATOES

6 cups creamed cottage cheese
1 ½ cups sour cream
8 cups mashed potatoes, no milk added, do not use flakes
3 tablespoons finely grated onion
½ cup Parmesan cheese
salt

Whip in blender until smooth: cottage cheese and sour cream; add to the mashed potatoes.  Stir in onions and salt.  Spoon into a buttered square casserole.  Brush top with melted butter and sprinkle with Parmesan cheese.  Bake at 350 for 30 minutes.

Variation:  top with french-fried onions or chow mien noodles.  When using onions or noodles, watch carefully as they burn easily and quickly.

POTATO LATKES

6 onions, grated
12 potatoes, peeled, grated, drained
1 ½ cup whole wheat flour
1 ½ cups chopped parsley
24 eggs, beaten
2 pints milk
oil for frying

Using this batter, fry like small pancakes in hot oil.  Brown both sides well.  Top with applesauce and serve with a cottage cheese and tomato salad.

OLD FASHIONED POTATO SOUP

12 potatoes, diced
6 large onions, chopped
2 teaspoons salt
2 15-oz cans of evaporated milk
4 tablespoons butter
4 tablespoons chopped parsley
½ cup shredded cheese
12 sourdough bread bowls

Cover potatoes and onions with water and cook in saucepan with salt until very tender, almost mushy.  Add milk, butter, parsley.  Ladle into bowls, top with shredded cheese.  This soup can be cooked in 5 minutes in the pressure cooker.
