Yes...I did this
all by myself in desperation. I wanted something elegant and easy to
make people think I'm a really good cook. It does the job beautifully...and
if you use an abundant amount of frozen blackberries it also does quite a
job on the budget!
Berry Jello
Frozen Blackberries
Cool Whip
Make jello.
Immediately after dissolving the jello and adding the cold water add the frozen
berries. I like to add enough berries so that the jello barely covers
them. Chill. When firm, top with Cool Whip.
Blueberry
Salad

1 (15 oz) can
blueberries, drained (reserve juice)
1 (8 oz. can crushed
pineapple, drained (reserve juice)
2 sm. pkgs. raspberry
Jello
1 (8oz) pkg. cream
cheese
1 c. chopped celery
1 c. whipping cream
Dissolve Jello
in 2 cups boiling water (use fruit juice as part of liquid.) Chill
until slightly set. Cream the cream cheese. Beat into Jello.
Add berries, pineapple and celery. Whip the whipping cream and fold
into mixture. Chill until set. Serve on lettuce leaves, if desired.
Raspberry
Dream Salad
2 cups pretzels,
finely crushed
3/4 c. butter, melted
1/2 c. sugar
1 (8oz) pkg. cream
cheese, softened
1/3 c. sugar
8-oz ctn. Cool Whip
1 (6-oz) pkg. raspberry
Jello
2 c. boiling water
2 (10-oz) pkgs. frozen
raspberries
Mix pretzels,
margarine and sugar. Press in 9x13-inch pan. Bake 6 minutes at
350. Cool. Combine cheese and sugar. Mix until well
blended. Fold in Cool Whip. Spread over cooled crust and chill.
Dissolve Jello in water; add frozen raspberries. Stir gently until
fruit separates and Jello thickens. POur over cream cheese layer.
Chill until firm. Makes about 20 small servings.
Elegant Raspberry
Chocolate Pie
Jell-o Easy Entertaining
1 packages (4-serving
size) Raspberry Jello
1 1/4 cups boiling
water
1 pint vanilla ice
cream, softened
1 package chocolate
crumb crust
3 tablespoons margarine
2 squares Baker's
Semi-Sweet Chocolate
Cool Whip, thawed
(optional)
Raspberries (optional)
Dissolve gelatin
in boiling water. Spoon in ice cream. Stirring until melted and
smooth. Chill until slightly thickened, about 10 mintues. Pour
into crust. Chill until firm, about 2 hours.
Melt margarine
with chocolate; cool. Spread over pie. For ease in serving, let
pie stand 5 minutes after spreading on chocolate. With knife, lightly
score pie into serving-size pieces. Chill unti until chocolate mixture
hardens. Garnish with whipped topping and raspberries. Makes 8
servings.
