Tons of Cheese
Three Cheesy Vegetarian Dishes

CHEESE QUICHE

1 ½ pounds Jack Cheese, shredded (3 cups)
1 ½ pounds Cheddar Cheese, shredded (3 cups)
2 packages frozen Pie Crusts
3 packages frozen chopped broccoli
2 cups half and half or thinned sour cream
6 eggs, slightly beaten
1 teaspoon salt
¼ teaspoon cilantro or cumin or other seasoning

Spread 1 ½ c. Jack and ½ c. cheddar cheese over the bottom of frozen pie shell.  Sprinkle chopped broccoli over the cheeses.  Combine 1 c. half and half or thinned sour cream sauce, eggs, salt and seasoning.  Pour carefully into pie shell.  Top with rest of cheese.

Freeze in an oven proof pan.  When thawed, bake uncovered, at 325 for 40 to 50 minutes.

COTTAGE ENCHILADAS
2 qts cottage cheese
3 eggs, beaten
4 cups cheese, grated
1 large onion, chopped
garlic
2 bags flour tortillas
sugar
sour cream or plain yogurt

Mix ingredients except tortillas, sugar and yogurt or sour cream.  Roll in tortillas and into baking dish.  Spread with sour cream or yogurt.  You can sprinkle with sugar is a touch of sweetness is desired.  Bake at 300-350 until hot.

LASAGNA

1 quart Cottage Cheese
2 eggs, beaten
1 box lasagna noodles, uncooked
2 quarts spaghetti sauce
1 ½ pounds Jack cheese, shredded to 3 cups
1 ½ pounds cheddar cheese, shredded to 3 cups
4 cans tomato sauce

Use uncooked lasagna noodles.  Combine cottage cheese with beaten eggs.  Combine the two types of cheeses in another bowl.  Combine the spaghetti and tomato sauce in another bowl.  In 2 greased pans, layer noodles, sauce, cottage cheese, shredded jack and cheddar cheese.  Repeat, and end the dish with a layer of cheese.  Let stand in refrigerator for several hours or over night.  Cover with double al. foil and bake for 1 hour at 375.  Let stand for 15 minutes before cutting and serving.  Microwave: full power for 15-20 minutes.  Let stand as above.

I have posted more than one recipe on each of my cooking pages.  For your convenience I have submitted this individual index so you can find which recipe is on which page.  I hope you enjoy them.  Remember that my recipes are altered to be for a family of twelve.  If your family is smaller, many of the recipes can be prepared as is and then divided and frozen for additional meals during stressful times.  This index is just for listing the recipes and does not include the other kitchen and cooking articles.
