Six Berry Recipes
Blackberry
Coconut Salad
Fresh blackberries
Grated coconut
Peach slices
Maple syrup
Arrange fresh
berries on platter. Surround with coconut. Arrange peach slices
on top of coconut. Thread berries with syrup.
Coconut Fruit
Dip
1 can (8 oz)
crushed unsweetened pineapple, undrained
¾ cup milk
½ cup sour
cream (nonfat is good)
1 package (3.4 oz)
instant coconut cream pudding mix
Fresh strawberries,
pineapple, grapes, and melon or other fruit
In a blender,
combine the first four ingredients; cover and process for 1 minute or until
smooth. Serve with fruit. Store in the refrigerator.
Creamy Fruit
Dip
1 8 oz package
cream cheese, softened
3 tablespoons orange
juice concentrate
1 7-oz jar marshmallow
cream
Fresh Strawberries
Sliced kiwifruit
In a mixing bowl,
beat cream cheese and concentrate until smooth. Fold in marshmallow
cream. Serve with fruit. Store in the refrigerator.
Fresh Fruit
& Yogurt Dip
1 16 oz vanilla
yogurt
2 10 oz frozen strawberries,
thawed and pureed
½ cup honey
2 teaspoons nutmeg
chopped fresh fruit
In medium bowl,
combine the pureed strawberries, yogurt, honey and nutmeg. Stir until
smooth. Serve as a dressing over the fresh fruit or as a dip.
Raspberry
Cream Fruit Salad
Fruit
1 3 oz pkg. cream
cheese
1 tablespoon lemon
juice
1 tablespoon grated
lemon peel
¼ teaspoon
salt
½ cup raspberry
jam
½ cup whipping
cream, whipped stiff
Cut up fruit.
Blend together all other ingredients except cream; then fold in the whipped
cream. Fold in fruit.

"Chicken" Salad

& Easy Kid-Friendly Meals by Elise Griffith
2 cans (16 oz
each) diced peaches in juice, drained, juice reserved
4 tablespoons rice
vinegar
2 tablespoons honey
2 packages (16 oz
ea.) salad greens
4 cups canned imitation
diced chicken (can use diced chicken but then this wouldn't be a vegetarian
dish)
4 cups fresh raspberries
1 cup sliced celery
1. Put
reserved juice from peaches in bowl, add rice vinegar and honey, and stir
until dissolved.
2. Place salad
greens, peaches, imitation chicken, raspberries and celery in large bowl,
and toss gently. Drizzle dressing over salad, and toss again.
3. Serve immediately,
or refrigerate until ready to serve.
