Tacos, Enchiladas and...Pizza?
Four Mexican recipes
for spice wimps.
Just add salsa
if you want the burn!
ENCHILADA
CASSEROLE
2 dozen flour
tortillas, cut into quarters
3 cups grated mild
cheddar cheese
3 cups grated Jack
cheese
1 cup finely chopped
green onions
3 cups diced chicken
or browned ground beef (optional)
8 cups enchilada
sauce
Preheat oven
to 375. Lightly grease two pans. In a bowl, combine the cheese,
onion, chicken and 1 cup enchilada sauce. Mix well. Pour 1 cup
of sauce into each prepared pan. Spread 1/6 of the flour tortilla pieces
over the sauce in each pan. Spread ¼ of the cheese mixture over
the tortillas in each pan. Repeat again. Top with remaining tortillas.
Pour 2 ½ cups remaining enchilada sauce over each casserole.
Baked in preheated oven 35 minutes until bubbly.
TACO PIE
3 pounds ground
beef (5 cups cooked)
1 large onion, finely
chopped (1 cup)
½ envelope
taco seasoning mix (mild)
2 cups milk
2 cups biscuit mix
4 eggs
1 pound cheddar cheese,
shredded (2 cups)
2 cups sour cream
2 tomatoes, chopped
1 lettuce, shredded
In a large skillet,
cook and stir ground beef and onion until beef is brown; drain. Combine
beef with taco seasoning mix, and spread in a baking dish. Beat milk,
baking mix and eggs until smooth, 15 seconds on high in a blender or 1 minute
with a hand beater. Pour milk over beef in dish. Cover dish with
foil, and freeze. Keep bag of grated cheese with pie.
To prepare for
serving, thaw pie. Bake uncovered in a preheated 400 oven for 35 minutes.
Top with sliced tomatoes; sprinkle with cheese. Bake until golden brown,
8 to 10 minutes. Top with sour cream, chopped tomato and shredded
lettuce.
TACO SALAD
2 large packages
corn chips
2 pounds ground meat
1 cup shredded cheese
2 30- oz can refried
beans
2 bunches green onions,
finely sliced
shredded salad or
lettuce
tomatoes, diced
avocados, sliced
2 pints sour cream
Tortilla or corn
chips
In a skillet,
brown ground beef. Season to taste. Heat refried beans until
bubbly, adding a little water or tomato sauce to thin. Serve all other
items cold. Place a dish of each item on the table and let each person
prepare his own salad, starting with the corn chips and adding other items
in the order listed, finishing with sour cream.
TACO BUBBLE
PIZZA
2 1/2 lbs. of
hamburger or turkey
2-15 oz cans of tomato
sauce
4 c grated cheddar
cheese
4 tubes of biscuits
and
2 pkgs. of taco seasoning
Brown the hamburger
and drain, add seasoning and tomato sauce. Grease two 9"x13" pans. Cut biscuits
in to quarters and put two tubes in each pan. Pour hamburger mixture over
the top of the biscuits and top with cheese. Bake at 400 degrees for
15 min.

I hope you enjoy them. Remember that my recipes are altered to be for
a family of twelve. If your family is smaller, many of the recipes
can be prepared as is and then divided and frozen for additional meals during
stressful times. This index is just for listing the recipes and does
not include the other kitchen and cooking articles.
