Beef and Noodle Favorites
Three Ground Beef Dishes

BEEF NOODLE SUPREME

2 pounds ground meat
4 tablespoons margarine
2 cloves garlic, minced
2 teaspoons salt
2 teaspoons sugar
4 8 oz. Cans tomato sauce
2 8oz. pkg cream cheese
2 cups sour cream
12 green onions, including green part, chopped
2 8 oz pkg. Noodles
2cups cheddar cheese, grated

In a skillet, brown meat in margarine.  Add garlic, salt, sugar and tomato sauce; simmer about 10 minutes.  Soften and blend thoroughly cream cheese and sour cream.  Add onions and set aside.  Boil noodles until tender; drain.  In baking dishes, layer noodles, cream cheese mixture, and meat sauce.  Repeat layers.  Sprinkle cheese on top.  Bake uncovered at 350 for 30 minutes.

HACIENDA HAMBURGER

3 pounds ground meat, browned
2 large onions, chopped
2 cans crushed tomatoes
1 package macaroni, uncooked
2 cups cheese, grated

Brown meat and onions together, add the canned tomatoes.  Add the uncoked macaroni.  Cook until noodles are ready.  Add cheese and warm until melted.  My mother always added green peppers to this dish but since I can't stand peppers we leave them out.

LOGANOFF

2 pounds ground meat
1 large onion, chopped
½ cup margarine
1 bag frozen peas
4 tablespoons flour
½ teaspoon salt
garlic to taste
2 cans cream of chicken soup
1 ½ cups sour cream
cooked potatoes, noodles, rice or toast

In skillet cook the meat and onions.  Add peas.  Stir in flour, salt, garlic, and soup.  Cook, stirring constantly.  Reduce heat; simmer uncovered 10 minutes.  Stir in sour cream; heat through.  Serve over hot noodles, rice, potatoes or toast.  Add extra salt, garlic or onion powder to taste.

I have posted more than one recipe on each of my cooking pages.  For your convenience I have submitted this individual index so you can find which recipe is on which page.  I hope you enjoy them.  Remember that my recipes are altered to be for a family of twelve.  If your family is smaller, many of the recipes can be prepared as is and then divided and frozen for additional meals during stressful times.  This index is just for listing the recipes and does not include the other kitchen and cooking articles.
