Eight Banana Recipes
BANANA LOGS
Bananas
Coconut
Lemon Juice and Real
Maple Syrup
alternative: Sour
Cream
Roll banana in
lemon juice and syrup and then coconut. Or Roll banana in sour cream
and then coconut.
FROZEN BANANA
DESSERT
Peel Bananas
and freeze on a tray. Once frozen then pop into zip lock bags.
To have a frozen dessert put a frozen banana into the blender, add a small
amount of liquid such as juice, yogurt or milk and any other canned, frozen
or fresh fruit and blend. To make a chocolate dessert, add Quick instead
of extra fruit. Also try adding Quick and Peanut Butter.
PEANUT BUTTER
AND BANANA SANDWICHES
Peanut Butter
and Banana sandwiches are especially delicious when served on Raisin or Apple
bread.
ORANGE AND
BANANA AMBROSIA
A wonderful and
quick salad can be made with bananas and oranges. I like to add coconut
but because some children object I often leave it out. When I have them,
I add miniature marshmallows for added appeal.
6 oranges, cut
into pieces over the bowl to catch the juice
6 bananas, cut into
thick slices
Juice of two more
oranges
2 cups cool whip
In a bowl, stir
together the juice and cool whip. Stir in the fruit until well coated.
Serve immediately. I have heard of stirring in 2 teaspoons of finely
chopped mint but have never tried it.
SWEET SALAD
4 apples
4 pears
5 bananas
1/2 cup raisins
1/2 cup date pieces
1/3 cup apple or
pear juice
Chop fruit.
Combine all ingredients. Best when several hours or even a day old.
ORANGE JELL-O
WITH PUDDING TOPPING
2 packages orange
Jell-O
2 cups boiling water
1 can crushed pineapple
1 can frozen orange
juice concentrate
1 can mandarin oranges
with juice
3 bananas
1 large pkg. instant
vanilla pudding
1 pkg. Cool Whip
2 cups milk
Dissolve Jell-O.
Ad everything except pudding, milk and cool whip. When set, add topping.
Topping: mix cool whip, pudding and milk until thick. Put on top of
Jell-O. Grated cheese may be added to the top.
FRUIT SALAD
4 cups apples,
diced
4 cups oranges, peeled,
diced
4 cups bananas, peeled,
diced
2 14 oz can chunk
pineapple, drain, reserve juice
½ cup of pineapple
juice
1 cup coconut
3 cups miniature
marshmallows
Combine all ingredients
together in a large bowl with reserved pineapple juice. Serve immediately.
FRUIT MEDLEY
1 can (21 oz)
peach or apricot pie filling
2 cans 15 oz each
fruit cocktail, drained
1 can 20 oz pineapple
chunks, drained
1 can 15 oz mandarin
oranges, drained
2 medium firm bananas,
sliced
In a large bowl,
combine pie filling and canned fruits. Cover and refrigerate.
Stir in bananas just before serving.
