More Banana Recipes

BANANA-ORANGE BREAD

8 cups sifted flour
2 tablespoons pumpkin pie spice
4 teaspoons baking soda
4 teaspoons baking powder
4 cups mashed ripe bananas (8 large bananas)
4 6 oz cans orange juice concentrate, thawed
8 eggs beaten
4 cups raisins, optional

On a sheet of waxed paper, sift together flour, spice, soda and powder and set aside.  In large bowl, mix bananas, orange juice and beaten eggs until well blended.  Stir in raisins.  Add dry ingredients; stir just until moistened.  Pour into four greased loaf pans.  Bake in 350 degree oven for 40 minutes or until toothpick inserted in center comes out clean.  Cool in pan for 10 minutes.  Remove from pan.  Cool on rack.  Slice thinly.

NUTTY FRUIT MEDLEY
Nov/Dec 2000 Taste of Home's Quick Cooking

2 large red apples, chopped
1 cup green grapes
1 medium firm banana, sliced
1/2 cup chopped walnuts
1/4 cup mayonnaise
2 tablespoons sour cream
1/2 tea. sugar
1/2 tea. lemon juice
pinch salt

In a large bowl, combine the apples, grapes, banana and walnuts.  Combine mayonnaise, sour cream, sugar, lemon juice and salt; pour over fruit mixture and toss gently to coat.  Yield: 6-8 servings.

PURPLE COWS

2 cups milk
1/2 cup grape juice
2 sliced bananas

Place all the ingredients into a blender and mix until smooth.

BANANA-NUT CHIP BREAD
Sep/Oct 2000 Taste of Home's Quick Cooking

1 1/2 cups mashed ripe bananas (about 3 medium)
1 1/4 cups sugar
3 eggs
1/3 cup oil
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
3/4 cup quick cooking oats
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup (6 oz) semisweet chocolate chips
3/4 cup chopped walnuts

In a mixing bowl, beat bananas, sugar, eggs, oil and vanilla.  Combine the dry ingredients; stir into banana mixture.  Fold in chocolate chips and nuts.  Pour into two greased 8-in x 4-in.x2-in loaf pans.  Bake at 350 for 55 minutes or until a toothpick inserted near the center comes out clean.  Cool for 10 minutes before removing from pans to wire racks.  Yield: 2 loaves.
