An Abundance of Apples
3 Recipes

Maple Baked Apples

Tart Apples, unpeeled, quartered and cored
Chopped dates, as desired
Maple syrup
Cinnamon or lemon rind

Place apples in large baking dish.  Sprinkle with the chopped dates.  Combine syrup with lemon rind or with cinnamon according to desire and a little water.  Pour over apples and bake in 375 oven for 1 hour or until tender.  Baste with the syrup occasionally.  Serve warm or chilled.

Sautéed Apple Slices

12 large tart apples
12 teaspoons butter
3 teaspoons grated lemon or orange rind (optional)
6 teaspoons lemon juice
nutmeg
Sugar to taste

Quarter washed apples, core and slice; do not peel.  Melt butter in medium skillet.  Add apple slices; sauté over medium heat for 10 to 15 minutes until apples are tender and transparent.  Sprinkle with lemon juice; add lemon rind, if desired; add nutmeg and sugar to taste.  Serve warm.  12 servings.

Quick Apples for Pie

Ok, so not so quick because you have to peel these apples.  I did this when I had a large quantity of apples and used my neighbor's quick apple peeler.  This year I think I'll get my own because this was so easy!

Ingredients:
Tart apples (Any will do but nothing beats Tart Apples!), peeled, cored and sliced

Cinnamon - Lots!  Add what you think is right and then think that more is better.  Nothing is more disappointing to a spice lover than an apple pie without the KICK of cinnamon.  Of course, you might want just a hint, if so, ignore my sentiment!

Other spices if desired.  Whatever you want in your pie.

Sugar - This is one time that honey just doesn't work as well.

In a large bowl mix the ingredients and then place into Zip Lock bags and freeze.  When you want to make a pie or an apple crunch, simply thaw and dump into the dish and bake according to regular recipe!

I have posted more than one recipe on each of my cooking pages.  For your convenience I have submitted this individual index so you can find which recipe is on which page.  I hope you enjoy them.  Remember that my recipes are altered to be for a family of twelve.  If your family is smaller, many of the recipes can be prepared as is and then divided and frozen for additional meals during stressful times.  This index is just for listing the recipes and does not include the other kitchen and cooking articles.
