Three Make Ahead and Chill Chocolate Recipes
CHOCOLATE COOKIE MOUSSE
Plan ahead…needs to freeze
2 package (16 oz ea) cream-filled chocolate
sandwich cookies, divided
4 tablespoons milk
4 cups whipped cream, divided
4 cups semisweet chocolate chips
Crush 32 cookies, sprinkle into dish.
Drizzle with milk. In a microwave-safe bowl, combine 1 1/3 cups cream
and chocolate chips. Microwave, uncovered, on high for 1 minutes.
Stir; microwave 30-60 seconds longer or until chips are melted. Stir
until smooth; cool to room temperature. Meanwhile, in a mixing bowl,
beat remaining cream until soft peaks from. Fold into chocolate mixture.
Spread a third of the chocolate misture over crushed cookies. Separate
16 cookies, place over chocolate mixture. Repeat. Top with remaining
choclate mixture. Garnish with remaining whole cookies. Cover and freeze
for up to 2 months. Thaw in the refrigerator for at least 3 hours before
serving.
CHOCOLATE PRALINE TORTE
1 cups packed brown sugar
½ cup butter (no substitute)
¼ cup whipping cream
¾ cup coarsely chopped pecans
1 package devil’s food cake mix
TOPPING:
1 ¾ cups whipping cream
¼ cup confectioner’s sugar
¼ teaspoon vanilla
Chocolate curls (optional)
In a sauce pan, combine brown sugar,
butter and cream. Stir over low heat until butter is melted.
Pour into 2 greased 9-in round cake pans. Sprinkle with pecans; set
aside. Prepare cake mix according to package directions. Carefully
pour batter over pecans. Bake at 325 for 35-45 minutes or until a toothpick
comes out clean. Cool in pans for 10 minutes; invert onto wire racks
to cool completely. For topping, beat cream in mixing bowl until soft
peaks form. Add sugar and vanilla; beat until stiff. Place one
cake layer, pecan side up, on a serving plate. Spread with half of
the topping. Top with second cake layer and remaining topping.
Garnish with chocolate curls if desired. Store in the refrigerator.
HOMEMADE CHOCOLATE
PUDDING
2 cups sugar
1 cup baking cocoa
1/2 cup cornstarch
1 teaspoon salt
8 cups milk
4 tablespoons butter
4 teaspoons vanilla
M&M’s optional
In a heavy saucepan, combine sugar,
cocoa, cornstarch and salt. Gradually add milk. Bring to a rolling
boil over medium heat; boil and stir for 2 minutes or until thickened.
Remove from the heat; stir in butter and vanilla. Spoon into individual
serving dishes. Chill until serving. Sprinkle with M&M’s if
desired. 12-16 servings.
